This time, we’re heading to the heart of Italian food and wine culture… Tuscany!

Known for its rolling vineyards and rustic charm, Tuscany brings together simplicity and depth in every dish. From world-renowned Chianina beef to seafood from the Tyrrhenian coast, this is a region that knows how to eat and drink well.

Steak tartare made with prized Chianina beef, green salad, pickles

Mousse di Fegatini di Pollo alla Toscana
Chicken liver parfait, caramelised onion, sourdough


Pasta Course - each

Spaghetto Quadrato al Ragù di Polpo di Mamma Filide
Square-cut spaghetti with slow-cooked octopus ragù, “all’elbana” style

Main Course - to share

Tagliata di Chianina
Woodfired Chianina scotch fillet, served Tuscany-style with rocket, parmesan, cherry tomato salad and a balsamic vinegar reduction

Dessert - to share

Cantucci e Vin Santo
Traditional almond cantucci biscuits served with a glass of Tuscan Vin Santo

Our Head Chef Giovanni Bomba is delighted to shine the spotlight on his homeland… Abruzzo!

Stretching from the Apennine Mountains to the Adriatic Sea, Abruzzo is known for its stunning landscapes and cuisine that is rustic, bold, and full of soul.

Chef Giovanni has carefully curated this menu to highlight the authentic dishes from his childhood, many of which are steeped in history and local tradition.

Traditional Abruzzese cheese and egg balls, served with yellow capsicum soffritto and tomato sugo—a dish born from wartime ingenuity

Pizza e Foglie
Polenta-based bread topped with sautéed silverbeet, fried anchovies, and dry red chili—a rustic, savory delight from Abruzzo’s culinary roots

Trio Bruschetta
A trio of flavours - ventricina salami, creamy stracciatella with lemon, and savory porchetta with porcini mushrooms and chives

Raffiche al Porcini
Tricolor Raffiche pasta with porcini mushrooms and Parmesan — an earthy, indulgent homage to Abruzzo’s wild ingredients

Agnello au Cotrora
Braised lamb with roast potatoes and soffrito sauce—a hearty, rustic dish inspired by Abruzzo’s mountain cuisine

Boconotto: A traditional shortbread filled with almond and chocolate, served with vanilla ice cream—a sweet tribute to the chef’s mother’s recipe
